Kale sweet Kale

I’ve been waiting for the Kale season to kick in for a long time now.
In Sweden Kale is popular during the Holidays, that means that EVERY grocery store carries Kale this time of year, and they usually have organic kale too. So It’s an understatement to say that I’m overdosing on Kale these days. I’m basically starting my day with a Kales smoothie and ending it with Kale chips from the dehydrator.

Here is the recipe of my morning smoothie.

3 big leaves of Kale
1 Banana
1 Orange
1 Cup of water
5 mint leaves

Mix everything together in a high speed blender and use some berries as a topping.

Enjoy this delicious green smoothie in the morning and you will fell like you have energy to move mountains.

Good Morning Sunshine

I love morning rituals and routines. Starting you day off right affects so many things. Every morning I make sur to write and set my intentions for the day, I meditate and I make sure to drink a wonderful nutritious smoothie. Here is one of my favorite ones. It’s full of vitamins and helps boost my immune system. I call it Good Morning Sunshine.

1 orange
2 cups of pineapples
1/2 inch of turmeric
1/2 inch of ginger
1 1/2 cup of coconut water

2-3 mint leaves for decoration (optional)

Mix everything smooth in a high speed blender.
Enjoy and stay radiant!

Healthy Fast Food

This is my type of fast food. It literally takes 5 min to prepare and it make you feel wonderful and energetic instead of tired and bloated like “regular” fast food leaves you feeling.

All you need is a nori sheet and whatever is in your fridge!

In this one I used the following ingredients:

1 avocado

Some sauerkraut Kimchi (this is a terrific probiotic)

1/4 of a raw cauliflower that I threw in the blender and made into “rice”

1 tbsp sesame oil

1 tsp tamari

A pinch of cayenne pepper

Stir the cauliflower rice with the tamari and the oil i a separate bowl. Place the nori sheet on a plate and put all the ingredients in the middle and just fold the corners in. Smear a drop of oil or water on the inside on the corner of the sheet to make it stick. Now it’s time to dig in! I just eat it with my hands, but if you’re civilized and use cutlery,  remember to use a sharp knife to cut through the nori sheet.

Eat your fruits dear!

When I was a child, grownups always told me that fruits where better than candy. I didn’t fully believe them, because I had not yet tried this smoothie.
This is waaaay better than any candy I have ever had and it’s so good for you!!

RECIPE:
2 ripe medium peaches
1 Banana
1 cup of Almond milk
1/2 cup of raspberries
2 dates (if you like it sweet)

Mix everything until smooth in a high speed blender. Use your favorite topping to boost your smoothie. I often use different seeds and berries.

I hope this will satisfy your sweet tooth.

Eating Right?

Usually when you have bodily issues people ask you, are you eating right?
Personally I don’t believe that there is one way that fits all, but I definitely believe that we have a personal right or wrong way. The trick is to figure out what works for you!

I thrive on a Plantbased Vegan diet, and of course I advocate this way of living due to it’s numerous health benefits, the fact that it doesn’t hurt this planet, and that it promotes equal rights for all living beings.

I used to be very sick, and I’m still struggling with some weight issues due to some chemical unbalances, but this way of living is really helping me to balance my body and mind, and it brings my soul peace. People often ask me what I eat, so I thought I would share a picture and some recipes of what I eat.

MAIN COURSE:
A Sallad. 
This one is really simple.

1 Yellow Bell pepper diced
A bunch of lettuce
1 Avocado
1/2 Apple (I usually don’t mix fruit and veggies, but made an exception here)
1 carrot that I pealed with a potato peeler
6 cocktail tomatoes
3 inches/ 8 cm of cucumber
1 TBS Chia Seeds as a topping

DRESSING:
5 sun dried tomatoes
1 tomato
1 tbsp lemon juice
2 TBS Olive oil
Some fresh oregano and basil to taste
1 pitch of salt and pepper
Mix everything smooth in a high speed blender or food processor.

SMOOTHIE:
Sometime I add a smoothie to the meal.
This one is a delicious and filling blueberry smoothie
you’ll find the recipe here.

DESSERT:
Blueberry Pudding. Well, I was extra hungry and in the mood for blueberries this day, but you can use any berries in this recipe.

1/2 cup of buckwheat (soaked for 30 min and thoroughly rinsed)
1 TBS of coconut cream (you can make this by mixing coconut flakes in a high speed blender until they turn creamy) or use optional nut or seed butter.
1 cup of berries
1 banana
2 TBS coconut nektar or agave

Mix everything smooth in your blender. Serve with 1 TBS hemp seeds and some berries as a topping .

Turmeric, Nature’s Yellow Gold

My healing process has been long and slow at times. But I really do feel that I’m getting closer to the finish line… Especially since I started drinking smoothies and juices with turmeric.  It makes all my cells radiate and vibrate. Research shows that Turmeric is effective at treating depression, and it may even be more effective than some of the most common anti-depressant drugs currently on the market. Curcumin, a derivative of turmeric, is also known to battle cancer and inflammations. bild 3
I wanted to create a smoothie that was super healthy and still delicious. So I decided to combine turmeric with the Sea buckthorn berry.

This little berry is a real power plant. It protects your heart and makes your skin radiate. So if your looking for a smoothie that will help you stay happy, healthy and glow, look no more.

Recipe:

1 cup of filtered water

1-2 banana (depending on how much sweetness you like, I take 2)

1 cup of Sea buckthorn berries

1 inch of fresh turmeric

Mix everything together in a high speed blender and let the healing begin.

Nice Cream

It’s hot in Stockholm today! Luckily I alway keep some bananas in the freezer so I can make myself some cooling “nice cream”.  This recipe is so easy, and the best part is, it tastes like ice cream but it’s HEALTHY!

RECIPE:
3 frozen Bananas
1 TBSP of Raw Cacao or Carob
1 TBSP of Nut butter (I used Peanut butter)

Mix everything together in a High speed blender. If you have a regular blender or food processor, then let the bananas soften for 15 min before you mix.

You can use some fresh berries as a topping, or maybe some coconut flakes and cacao nibs?
With every bite remember that this is good for you, and your body deserves it.

Can Chocolate Be Healthy?

March is health awareness month, and Shari’s Berries approached me and asked if I could create a Healthy Chocolate recipe. It got me thinking about what’s great about chocolate? well, what’s not great!! This divine bean is full of magnesium and Iron, that we need to nourish our beautiful bodies. It’s also a powerful stimuli that makes our endorphins dance like nobody is watching…. no wonder we CRAVE it!

I have created a 3 Minute Chocolate Mint Truffle, for the active Man/Woman. This delicious little pice of heaven will melt in your mouth, give you a taste of freshness and make your cells do the cha-cha.
I only use Raw Organic ingredients that will help repair and nourish your cells and give you a ton of energy to tackle your day.

RECIPE: (6 Truffles)

2 TBSP Coconut Oil
3 TBSP Of Optional Sweetener like Raw Maple Syrup, Raw Honey or Raw Agave.
2-3 TBSP Raw Cocoa Powder
3 TBSP Shredded Coconut (or any other nut)
2 TBSP Of Cacao Nibs
6 drops of Cold pressed Peppermint Oil
Some Gojis or other berries as topping.

Put all the ingredients in a bowl and stir them together until it’s a smooth paste for a couple of minutes to get the right truffle texture, if you cant wait eat them creamy straight away.

Raw Tahini

My favorite seed is probably the sesame seed. This tasty little seed is full of nutrients like calcium, iron, proteins and healthy fats, and it tastes divine. I regularly make raw tahini (sesame paste), that I keep in the fridge and use in smoothies, puddings, wraps, and as a spread on raw food bread. It lasts for 3-4 days, and it’s super easy to make.

RECIPE:

1 cup raw sesame seeds (un-toasted)
2 cups water, to soak

INSTRUCTIONS:

Soak the sesame seeds for 4 hours.

Drain and rinse them under running water and put them in the fridge to sprout for 2-4 hours.

Take the seeds and mix them in a high-speed blender like the vitamix, until it turns into a smooth paste. You can store the tahini in a sealed glass jar for 3-4 days.

Beet Smoothie

I’m in a beet flow at the moment. I eat at least 1-2 raw beets every day.
Did you know that in recent lab studies on human tumor cells, betanin pigments from beets have been shown to lessen tumor cell growth. The tumor cell types tested in these studies include tumor cells from colon, stomach, nerve, lung, breast, prostate and testicular tissue.
How awesome is that?!! If you haven’t tried beets in you smoothie before, the time is now!

RECIPE:
1 big beet
1 large sweet apple or 2 small ones
2-3 cm of ginger
1 cup of coconut water

(If you want this smoothie to be even smoother, juice the beet and apple and add a ripe banana)

INSTRUCTIONS:
Peel the beet, then mix everything together in a high speed blender. Remember to use organic and preferably local produce, for the earth and for your beautiful body.
